The weather has been off and on rain, so I went out fishing with Dad this morning. Dad ended up showing off with this Big Red!

A classic New Orleans favorite is BBQ shrimp. Well I was craving this tasty dish except I didn’t have any shrimp. As always I have fish, so I thought why not BBQ fish. Man I’m glad I did! Oowwie it was good! So I though I should share the recipe.
Ingredients :
1 1/2 sticks of butter
1/4 olive oil
1/4 cup Worcestershire sauce
6 cloves of garlic minced
2 bay leaves
1 table spoon Creole seasoning
1 table spoon oregano
2 teaspoons paprika
1/2 teaspoon black pepper
1/2 teaspoon cayenne pepper
4 green onions sliced
1 lemon sliced
1/2 lemon juiced
2 lbs. of Speckled trout or Redfish filets and French bread
Cook:
Preheat oven to 350
Combine all ingredients into a sauce pan (not fish and bread) on medium heat until combined and warn. Salt to taste.
Lay filets in a 9X13 baking dish
pour mixture over fish and bake for 15-20 min
Serve with French bread.

It was Sam’s birthday trip and Sam was determined the rain was not going to ruin his day. Fortunately the rain stayed light for most of the day and Sam got a good mess of Speckled Trout for his birthday.

Johnathon called me and said “I saw your posts about the dolphin, we would like to go fishing.”
Most of this group had never been saltwater fishing. We went out for a late afternoon trip and had non stop action. They were hooked and will definitely be back for more.

Two local news channels did an article on a video I submitted to them. Many times I have seen the pink dolphin in the waters around the Calcasieu ship channel, but there were always rumors that there were two of them. Well I have put that rumor to rest, there are definitely two pink dolphin in our waters.
